Christian’s Spring onion pancake stuffed with 3-cup Chicken
酸酸美味執 For the Sauce:
茄汁¼ cup ketchup
米醋¼ cup rice vinegar
白糖1 tablespoon sugar
豉油1 tablespoon soy sauce
紅麵豉½ teaspoon red miso paste
生粉1 teaspoon cornstarch
凍水1/2 cup cold water
蔥油餅For the pastry :
10 sheets filo pastry
蔥花80g spring onions, chopped
海鹽Fine salt
菜油Vegetable Oil
三杯雞 For 3 cup chicken filling:
雞俾肉2 pieces Chicken thigh meat
麻油1 tablespoon Sesame oil
老抽1 teaspoon Dark Soy sauce
生抽1 teaspoon Light soy sauce
紹興酒1 tablespoon XiaoXing wine
生薑1 piece ginger
蔥1 piece spring onion
蒜頭2-3 pieces garlic
白糖1/2 teaspoon sugar
九層塔1 branch Thai basil leaves
Others:
菜油½ cup oil
蛋黃1 Egg yolk
Instructions:
Layer the filo pastry with the spring onions and oil
Set aside.
Make the 3 cup chicken, cool down
Make the sauce, set aside
Stuff the 3 cup chicken and Egg into the filo pastry.
Fry
Serve hot with the sauce
